Those who know me know that cruising is my favorite way to travel. You get all you can eat food, Broadway-quality shows and tons of activities. Not to mention endless menus of the kind of sugary, tropical drinks I typically avoid under normal circumstances due to the endless calories they contain.
For the past few years, cruising has been something special that I share with my husband. In 2013, he asked me to marry him during our first cruise together. Technically he proposed before our first cruise together (waiting a whole 30 minutes after we stepped on board to pull out the ring).
Ever since then, we have made it a yearly tradition to go on a cruise together. In 2015, we chose to honeymoon on a cruise. After the stress of planning a wedding, we looked forward to the idea of a no-frills vacation where the only decision we had to make was which cocktail we wanted to order next.
Most recently, we sailed on Royal Caribbean’s Harmony of the Seas (currently the largest cruise ship in the world) for 7 nights to San Juan, St. Maarten and Labadee. This time around we invested in the beverage package, which allowed us to enjoy a virtually unlimited amount of beer, wine and cocktails.
The week after we returned, I was listening to Pandora at work when a song called “Pineapple Skies” by Miguel came on. I sat at my desk, staring at a report and wishing I was back on the boat, sipping on something that was quite a bit different than what was in my coffee cup. And then it occurred to me – the song title would make a hell of a name for a drink.
What’s your favorite vacation cocktail?
Pineapple Skies Cocktail
1.5 oz. vodka
1 oz. blue curacao
2 oz. pineapple juice
2 oz. ginger ale
1 oz. simple syrup
Pineapple wedge for garnish (optional)
- Pour all ingredients into a shaker and add ice
- Shake well and strain into glass
- Garnish with pineapple wedge, if desired
